Southern Delights

My sister Susan taught us
Kids to make a mustard
Sandwich when no meat
Was available,
She also taught us to take
Two pieces of fresh soft
White bread and spread
Some peanut butter lightly
Over each piece then add a lot
Of iceberg lettuce and four
Pieces of crispy bacon to
Make a delicious sandwich.
I made one for my daughter-in-law
fifty years later and she
Was surprised how delicious
It tasted, though my favorite
Was to cut a package of hot
Dogs in half then mix some pancake mix adding an extra egg
And masa flour. Next you put Popsicle sticks in each half
Hot dog and twirl one in the batter
Then fast fry it to a golden brown
And dip it in some yellow mustard
For a treat that is hot and tasty.
I used to make them for my
Three sons and none were left
On the paper towel to drain for
Very long. Even I could not
Resist them as I was
Cooking them, a tricky
Snack with hot oil
And tongs. But
Fun on a cold
Or cool day
And a treat
To eat.
